Introducing Trillium.

Located on Snow Hill Queensway (just off Colmore Row), Trillium is a modern British restaurant bringing together some of Brum’s leading experts to deliver a fine dining restaurant with a more casual approach.


Trillium is an exciting collaboration between some of Brum’s biggest names who have been on the indie dining scene for years, bringing a truly unrivalled combined wealth of knowledge and experience. The brainchild of Phil Innes (the man behind the multi-award winning Loki Wine) and acclaimed local chef Glynn Purnell (a true Brummie legend), with Rob Palmer at the helm as head chef – this really a superhero team-up of epic proportions.


Together they posed the question: why should refined food be served in a way that limits how you enjoy it? So they set out to create a restaurant combining the quality of food, drinks and service comparable to traditional fine dining restaurants, but without the restrictions of a tasting menu. A space where dishes can be shared, passed across the table and the overall feel is more relaxed without compromising on quality. The result of this idea is Trillium.


The menu at Trillium is built around dishes designed for sharing, with the idea that they’ll be enjoyed across the table (but of course you can just order your favourites for yourself). The cooking is refined, not formal, with bold flavours, seasonal ingredients and a balance between precision and comfort. No unnecessary flair, just excellent cooking and fantastic ingredients, served in a way that’s both luxurious and familiar. Menus change regularly, led by the seasons and passions of the chefs.


With Loki’s Phil Innes on board, it comes as no surprise that this is also a wine-led restaurant, with just as much focus and attention on the wine list as there is on the delicious food. The list features over 500 wines, including classic regions, lesser-known producers and plenty of hidden gems. Trillium also offers one of the most extensive by-the-glass selections in the region and is one of only two Birmingham venues awarded two glasses in the Coravin Guide. For non-wine drinkers there is of course a selection of other excellent drinks options including cocktails, spirits, soft drinks and beers.


With an ideal central location (literally a few steps away from Snow Hill Station), this is a convenient place to gather, meet and share delicious food and drinks with friends, family or whomever you choose. The space itself is classy, elegant and refined but without ever being stuffy or pretentious. It lovingly combines everything we love about premium restaurants whilst maintaining an air of casual, relaxed dining – something we need plenty more of in this city.
