Introducing Albatross Death Cult.

Located on Newhall Square, Jewellery Quarter, Albatross Death Cult is the sister restaurant to rock ‘n’ roll experimental dining restaurant (and firm local fave) The Wilderness.

Intimate. Experimental. Communal. This exciting and dynamic dining experience is all about bringing people together around a monolithic kitchen counter for big, bold flavours and creative cooking. Albatross Death Cult (or just ‘Albatross’ between friends) is the sister restaurant to one of Brum’s favourite fine dining restaurants, The Wilderness, which will need no introduction to most of you.

With inspiration rooted in the Japanese Omakase experience and a menu primarily focused around (but not solely limited to) seafood and coastal ingredients, you can expect a mix of delicate, outrageously simple dishes alongside some that are decidedly more complex, the team painstakingly coaxing them into existence. From the simple to the intricate, each of the dishes on the 12 (or more) course tasting menu is perfectly balanced, adding value and flavour to the overall experience, presented to guests from the open kitchen.

The experience at Albatross is centered around the stainless steel kitchen counter, affording unfettered access to the work of the talented chefs who construct each course before the guests’ very eyes. With just 14 seats per sitting, this is an intimate affair, inviting curiosity and questions, as each new course is presented before you. You might think this sounds intimidating, but far from it – the atmosphere is laid-back and relaxed, as if you’re seated in a friend’s kitchen, gathered around the counter, but elevated.

The menu is a tasting menu in format (described as a rapid-fire sequence of 12 or more dishes) exploring what coastal culture looks like in one of the most land-locked cities in the UK. Committed to creativity and experimentation, the dishes change regularly but feature coastal ingredients that “smack you in the face like ocean spray”. The menu is designed to tease and tantalise your tastebuds with fleeting pleasures and tempting flavours that spark enjoyment and leave you wishing you could have just one more bite…

To accompany your tasting menu, the drinks have been carefully curated and thoughtfully selected to compliment the flavours and principles of the food. For the ultimate pairing, opt for one of their three drinks flights (each comprised of six drinks) which are not limited to wine and showcase a diversity of styles and flavours. Choose from the Elemental (classics with a non-conformist attitude), Esoteric (more diverse varietals and innovative styles for curious minds) or Abstinent (a varied line-up of low and no drinks) to accompany your menu.


Of course, if you prefer, there are plenty of other drinks options to elevate your dining experience if you prefer not to indulge in a full flight. The drinks list is inspired by the sea and evolves with the ebb and flow of the tasting menu. Expect a selection of wine and sake with a focus on the unexpected, alongside a selection of creative cocktails and 0% options too.

Naturally, the main focus of the space is the stainless steel counter around which the guests are seated, looking out over the open kitchen as each course is prepared in front of you. The space itself is cosy and intimate, with large windows, open brickwork and dark accents giving a moody, minimal feel to the space.
